    I may be going way to long it appears in my popper the chaff starts coming off during a very audible cracking stage! After all the chaff has completed about a minute goes by maybe 3 minutes in and a light cracking sound starts after the cracking sound completes I been timing 30 seconds before shutting off My beans are quite a bit darker than you show in the video If I let the beans continue another audible cracking sound starts and I have gone 10 seconds into that crack before shutting off! Usually my total time in the popper is between 3:44 and 4:00 Also I noticed after what I call first crack the temp will be at about 436 and drop rapidly to 360? I drilled a hole in the side to place a thermometer

      Hey there, what kind of popcorn popper are you using? It sounds like you're doing it all quite right! We suggest going by the beans' color instead of a few seconds after 1st crack ends, as there's a pretty small window before you get to 2nd crack. You might want to pull your coffee as 1st crack is teetering out. Let us know how your next roast turns out!

      Thanks for the response, I’m using the red popcorn popper I purchased from you guys! I think my problem is I’m not counting that first audible popping sound as first crack! I have. Let it complete the first audible sound which has all the chaffing, then once it moves into the next stage of rice crispy sound I have been considering that 1st crack So I’m pretty sure I’m burning my beans! I got one bag left to try and get this right! I will need to order more from y’all:)

    Newbie: I have roasted using a 500° oven, air popper, cast iron, manual churn popper on electric stove. I have tried stopping after 1st Crack, between 1and2, 2, till I see oil. Nothing impressed me. B4 I buy more greens I am buy8ng whole bean roasted. I have tried brazil,honduras,columbia,guatemala I assume it's my error Or can you recommend a bean that you have got expected results.

      Did you wait at least 2 days after roasting for what I call "peak flavor"? Central/South Americans are usually "crowd pleasers" so they usually don't have intense flavors in any one category. Do you want a cup with intense flavors? What is your brewing method? What is your source of water?

      Maybe give an air roasting method a try? We have a low cost $29) machine called Poppo that roasts 120 grams or so at a time. It is a bit fast but roasts very evenly. The reason I suggest this is I notice all the methods you have tried are primarily "conduction" types, transferring heat to bean via a hot surface. And this is difficult not to scorch coffee and gives a particular flavor. I would suggest trying an air roasting method!

      @@SweetMariasCoffee He did say he tried an "air popper". @WildManDanWMD did you try an air popper that has the air vents on the bottom that are at the outer edge of the popper chamber to ensure it spins the coffee and not one with a flat grate across the entire bottom? The latter won't work correctly.

    The motor on my Popper conked out at around 80 roasts. Luckily had ordered a motor just in case. Replacement went fine and the new motor seems much more powerful. I get plenty of bean movement on 100gs with the fan on low. Just now finished the video and saw that you have same thought that replacement motor is more powerful. Good idea to try bigger batch. I have some SM coffee due to arrive tomorrow, I’ll give a slightly bigger batch a go. Thanks for all y’all do to help educate us on our coffee journeys!

We responded to an earlier comment if you need more context, but Thompson found it hard to get the roast to come in under 25 minutes, and that those batches did not cup as well as the flat air fryer basket/tray.     I just bought a Behmor 1600+ second-hand from FB marketplace place, and the original owner had all the original manuals along with Sweet Maria’s postcard guide and instructions sheet. Just watched this video and roasted my first batch in this roaster. I just upgraded from a heat gun and bread maker. Still very green in the roasting game! Thanks for the knowledge 🧠

    Mine still going strong too. They’re built like tanks. Minus the roasting drum, on my third one and I’m having to use various hacks to keep the top from opening mid-roast.

      Luckily replaced parts like the roasting drum and the chaff tray are pretty inexpensive to replace. I'm on my second drum and second chaff tray. Chaff trays have a tendency to warp causing it to hit the drum while rotating.

      Eight years and counting on mine. I did have to order a replacement motor for the drum about four years ago. Also, I know the “catalytic converter “ thingy that burns smoke is no longer functioning but since I roast out in my shop, it doesn’t matter. Another thing is the temp gauge is sort of “on again, off again” for the chamber temperature. I’ll have to get a new one soon I think.

    If I leave my Behmor 1600+ on P5 for the whole roast, it will race through first crack and into second crack very quickly. I drop it to P3 at the start of first crack for 30 sec to slow it down a bit and then back to P4 to finish.

    Guys, I love Sweet Maria's and it was a great discussion, BUT, twice you brought up the heat gun and then never got around to spending ANY TIME on it. Not one second. I use a heat gun, a dog bowl and a wooden spoon. I feel it is absolutely the best and cheapest way for someone to give coffee roasting a try. I started that way 7 years ago and never did 'upgrade'. I regularly come within a point or two of the highest scores in home roasting competitions. And the total cost is under $50 with almost nothing to break. My usual batch is 10 ounces and first crack hits at about 8-9 minutes. And after 2 more minutes to cool back to room temp, the whole process is under 15 minutes from green to the finished container. I have done two very good videos and have studied this method for years. Let me know if you would like the link to the videos.

Our focus was on popcorn popper style roasters (and it sort of turned into a history lesson/roaster museum tour) so heat gun roasters were a bit outside what we were prepared to discuss in depth. We're glad you're having a lot of success with this method (we know a lot of other people are too)!

      @@SweetMariasCoffee Well, two points. You guys brought it up that you were going to talk about it or I never would have expected it. And two, as long as it has come up, how come there is never any discussion of this method. I have seen every other method including a long video on cast iron skillet roasting, which is a terrible way to roast coffee. Also, there are a number of things vastly superior to popcorn poppers and even a few things that are better than any other method including thousand dollar plus roasters such as the clearest sounds of first and even second crack because there is no barrier between the coffee and your ears. Same with vision and the smells of the different stages. No need for a tryer or spyglass. And maintenance is nonexistent. The bowl will last forever and that only leaves getting a new heat gun every 5 years. And there are other things but I would be writing for a week. So in conclusion, I wish Sweet Maria's would look into this method more (or at all). As you said, you've heard good stuff about this method but haven't actually found out why through actual experience. It is not the primitive beginner only method one might think it is. I would be glad to discuss this further if anyone is interested. Thanks for listening.

    I know this may upset coffee purists, but if you enjoy the fruitiness of honeyed coffees, adding a bit of Cascara to the brew can have some interesting results.

    Question: Is it really necessary to replace the drum into the roaster before restarting the cooling cycle? Extra time for the roaster to spray hot and more chance of skin burns.

      That's a great question. It probably isn't strictly necessary, and you're right that the heat from the drum is always an issue for the hands. We really like using a ove glove or other heat resistant glove to make it a little easier.

    How much does each one of those coffee bags weight?

      Great question! The weight varies by region, but the most common sizes are 60kg (132lbs) and 69kg (152lbs). In the video, the first bag Tom is opening is a less common size, 50kg (110lbs).

      The first coffee was India Monsoon Malabar and the second was Yemen Al Qafr Hawari. If you look both coffees up on our website you can find extensive farm notes!

    Just completed the motor replacement. New motor seems much more powerful. I increased my batch size by 10g and got more bean movement than ever. So much so in fact, first crack was much later with similar wattage output. I decreased fan speed to precipitate first crack. Overall quite the improvement!

      You can definitely roast in a regular oven or a toaster oven, though these aren't the most popular roasting methods. Sometimes the roasts can be a little uneven.     This was so helpful. I went from a Bambino Plus that had an autofrother function to the Silvia Pro X and was having trouble getting it right. My first try after watching this was SO much better.

    From all of the roasting machines I have put together from scratch, I think a wok has been my favorite of far. As you here are flipping the beans to keep the roast even, a wok is much easier than the heavy cast iron pan. A wok also keep the heat in one area and does a great job of even heat. In may wok I believer a 14 inch one, I can roast 1/2 pound with no problem.
